This recipe gives you a comforting, hearty, and flavorful Sicilian Chicken Soup, rich with tender shredded chicken, vegetables, and ditalini pasta in a savory, Italian-inspired broth. It is an easy, no-fail homemade soup dinner perfect for cold weather.

  • 2 tablespoons olive oil
  • 1 large yellow onion, chopped
  • 3 carrots, peeled and sliced
  • 3 celery stalks, sliced
  • 4 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon red pepper flakes (optional, for a zesty soup)
  • 8 cups low-sodium chicken broth
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 2 cups cooked, shredded chicken breast
  • 1 cup ditalini pasta
  • 1/2 cup fresh parsley, chopped
  • Salt and black pepper to taste

Instructions

  1. Heat the olive oil in a large pot or Dutch oven over medium heat. Add the onion, carrots, and celery. Cook until the vegetables soften, about 5 to 7 minutes.
  2. Add the minced garlic, oregano, basil, and red pepper flakes (if using). Cook for 1 minute until fragrant.
  3. Pour in the chicken broth and the can of diced tomatoes with their liquid. Bring the mixture to a boil.
  4. Reduce the heat to a simmer. Add the shredded chicken and the ditalini pasta. Cook according to the pasta package directions, usually 8 to 10 minutes, until the pasta is tender.
  5. Season the soup generously with salt and pepper to your taste.
  6. Stir in the fresh parsley just before serving. Serve this comforting chicken pasta soup hot.

Notes

  • For a richer broth, use homemade chicken stock instead of store-bought broth.
  • If you want a thicker soup, add 1/2 cup of small pasta like orzo or acini de pepe along with the ditalini.
