Ingredients
Scale
2 large heads broccoli, cut into medium florets
3 tablespoons olive oil
2 cloves garlic, minced
1/2 teaspoon kosher salt
1/4 teaspoon black pepper
1/4 cup grated Parmesan cheese
1 teaspoon lemon zest (optional)
Instructions
Preheat your oven to 425°F (220°C). Line a large baking sheet with parchment paper.
Bring a large pot of salted water to a boil. Add the broccoli florets and cook for 3 to 4 minutes until they are bright green and slightly tender. Do not overcook.
Drain the broccoli well and spread the florets in a single layer on the prepared baking sheet.
Using the bottom of a sturdy glass or a potato masher, gently press down on each floret until it is flattened or ‘smashed.’ You want to create more surface area for crisping.
In a small bowl, whisk together the olive oil, minced garlic, salt, and pepper.
Brush or drizzle the oil mixture evenly over the smashed broccoli.
Roast for 15 to 20 minutes, until the edges start to brown and crisp.
Remove the pan from the oven. Sprinkle the grated Parmesan cheese and lemon zest (if using) over the broccoli.
Return to the oven and bake for another 3 to 5 minutes, until the cheese is melted and golden brown.
Serve immediately as a flavorful side dish.
Notes
For extra crispiness, ensure the broccoli is very dry after boiling before you smash and oil it.
