Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease an 8×8 inch baking dish.
  2. In a medium bowl, whisk together the flour, baking powder, and salt for the batter.
  3. In a separate bowl, mix the melted butter and 1 cup of granulated sugar until combined. Stir in the egg and vanilla extract.
  4. Add the dry ingredients to the wet ingredients and mix until just combined. Do not overmix.
  5. Pour the batter evenly into the prepared baking dish.
  6. In a small bowl, combine the remaining ½ cup of granulated sugar and 2 tablespoons of ground cinnamon for the topping. Sprinkle this mixture evenly over the batter.
  7. Carefully pour 1 cup of boiling water over the entire surface of the batter. This step helps create the gooey sauce underneath.
  8. Bake for 30 to 35 minutes, or until the top is golden brown and the center is set.
