Instructions
In a large bowl, mix the sourdough discard, flour, instant yeast, and salt until just combined.
Add the olive oil and slowly mix in the warm water until a shaggy dough forms. You may need slightly more or less water depending on your discard hydration.
Turn the dough out onto a lightly floured surface. Knead for 5 to 7 minutes until the dough is smooth and elastic. This dough will be slightly stickier than traditional dough.
Divide the dough in half for two medium pizzas, or use the whole batch for one large pizza.
Shape the dough into a ball, cover it with plastic wrap or a damp towel, and let it rest for 15 minutes. This short rest allows the gluten to relax.
