1 cup chopped yellow onion
2 cloves garlic, minced
10 ounces fresh spinach, roughly chopped
8 ounces cream cheese, softened
1/2 cup shredded Monterey Jack cheese
1/4 cup grated Parmesan cheese
1/4 teaspoon salt
1/8 teaspoon black pepper
10 (6-inch) corn tortillas
2 (10 ounce) cans enchilada sauce
1 cup shredded Monterey Jack cheese, for topping
Instructions
Preheat your oven to 375°F (190°C).
Heat olive oil in a large skillet over medium heat. Add the chopped onion and cook until softened, about 5 minutes. Add the minced garlic and cook for 1 minute more until fragrant.
Add the chopped spinach to the skillet. Cook, stirring, until the spinach is wilted, about 3-5 minutes. Remove from heat and let cool slightly.
In a medium bowl, combine the softened cream cheese, 1/2 cup Monterey Jack cheese, Parmesan cheese, salt, and pepper. Stir in the cooked spinach mixture until well combined.
Warm the tortillas slightly to make them pliable. You can do this by wrapping them in a damp paper towel and microwaving for 30 seconds, or by warming them briefly in a dry skillet.
Spoon about 1/4 cup of the spinach filling into the center of each tortilla. Roll up the tortillas and place them seam-side down in a 9×13 inch baking dish.
Pour the enchilada sauce evenly over the rolled tortillas.
Sprinkle the remaining 1 cup of Monterey Jack cheese over the top.
Bake for 20-25 minutes, or until the sauce is bubbly and the cheese is melted and lightly golden.
Let stand for a few minutes before serving.
Notes
For a spicier enchilada, add a pinch of cayenne pepper to the spinach filling.
You can add sautéed mushrooms or black beans to the filling for extra texture and flavor.
Serve with your favorite toppings like sour cream, avocado, or cilantro.
