Ingredients
Scale
1 cup (2 sticks) unsalted butter, melted
1 1/2 cups granulated sugar
1 cup packed light brown sugar
4 large eggs
1 tablespoon vanilla extract
1 cup all-purpose flour
3/4 cup unsweetened cocoa powder
1/2 teaspoon salt
1/4 teaspoon baking powder
1 cup semi-sweet chocolate chips
1 cup fresh strawberries, pureed
1 tablespoon lemon juice (for strawberry puree)
Instructions
Preheat your oven to 350°F (175°C). Line a 9×9 inch baking pan with parchment paper, leaving an overhang for easy removal.
In a large bowl, whisk together the melted butter, granulated sugar, and brown sugar until combined.
Beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
In a separate bowl, whisk together the flour, cocoa powder, salt, and baking powder.
Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix. Fold in the chocolate chips.
Prepare the strawberry swirl: Combine the fresh strawberry puree and lemon juice in a small bowl.
Spread two-thirds of the brownie batter into the prepared pan. Dollop the strawberry puree mixture randomly over the batter.
Top with the remaining one-third of the brownie batter. Use a knife or skewer to gently swirl the strawberry mixture through the chocolate batter to create ribbons.
Bake for 30 to 35 minutes, or until a toothpick inserted near the center comes out with moist crumbs attached, not wet batter.
Let the brownies cool completely in the pan on a wire rack before lifting out and cutting into squares.
Notes
For an extra fudgy texture, slightly underbake by about 2 minutes.
If you prefer a stronger strawberry flavor, you can reduce the lemon juice slightly.
These brownies pair well with a glass of chilled Rosé or a light Pinot Noir.
For a richer chocolate finish, drizzle melted dark chocolate over the cooled bars.
