Ingredients
Scale
1 tablespoon olive oil
1 pound ground turkey (or ground beef)
1 medium onion, chopped
2 cloves garlic, minced
2 medium sweet potatoes, peeled and diced into 1/2-inch pieces
1 cup chicken broth
1 (15 ounce) can black beans, rinsed and drained
1 cup frozen corn
1 tablespoon chili powder
1 teaspoon cumin
1/2 teaspoon smoked paprika
1/4 teaspoon salt
1/4 teaspoon black pepper
Optional: 1/4 cup chopped fresh cilantro for garnish
Optional: Sour cream or avocado slices for serving
Instructions
Heat the olive oil in a large skillet over medium-high heat. Add the ground turkey and cook, breaking it apart with a spoon, until browned. Drain any excess fat.
Add the chopped onion to the skillet and cook until softened, about 4 minutes. Add the minced garlic and cook for 1 minute more until fragrant.
Stir in the diced sweet potatoes, chili powder, cumin, smoked paprika, salt, and pepper. Cook for 3 minutes, stirring occasionally.
Pour in the chicken broth. Bring the mixture to a simmer, then cover the skillet and reduce the heat to medium-low. Cook for 10-12 minutes, or until the sweet potatoes are tender when pierced with a fork.
Stir in the rinsed black beans and frozen corn. Cook uncovered for 3-5 minutes, until the beans and corn are heated through.
Taste and adjust seasoning if needed. Serve the sweet potato skillet hot, garnished with fresh cilantro, if desired. This recipe is a great alternative to complex meal planning.
Notes
For a Southwest twist, add 1/2 teaspoon of chipotle powder with the other spices.
If you prefer ground beef, substitute it for the ground turkey. This recipe works well with many protein sources, similar to what you might find with best meal delivery services focusing on quick prep.
If you are looking for a vegetarian option, substitute the meat with 1 (15 ounce) can of lentils, rinsed and drained.
