- 1 pound ground beef
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 packet taco seasoning
- 1 (15 ounce) can kidney beans, drained and rinsed
- 1 (15 ounce) can black beans, drained and rinsed
- 1 (15 ounce) can corn, drained
- 1 (28 ounce) can diced tomatoes, undrained
- 1 (10 ounce) can diced tomatoes and green chilies, undrained
- 4 cups beef broth
- Optional toppings: shredded cheese, sour cream, crushed tortilla chips
- In a large pot or Dutch oven, brown the ground beef with the chopped onion over medium-high heat. Drain off any excess grease.
- Add the minced garlic and cook for 1 minute more until fragrant.
- Stir in the taco seasoning, kidney beans, black beans, corn, diced tomatoes, diced tomatoes and green chilies, and beef broth.
- Bring the soup to a boil, then reduce heat and simmer for at least 20 minutes, or longer for flavors to meld.
- Serve hot, garnished with your favorite toppings.
Notes
- For a spicier soup, add a pinch of cayenne pepper or a diced jalapeño with the onions.
