1 pound ground beef
1 packet (1 ounce) taco seasoning
1 can (16 ounces) refried beans, not spicy
1 cup sour cream
1 package (8 ounces) cream cheese, softened
1 can (10 ounces) diced tomatoes and green chilies (Ro-Tel), undrained
2 cups shredded sharp cheddar cheese, divided
1 cup shredded Monterey Jack cheese
Tortilla chips, for serving
Instructions
Brown the ground beef in a large skillet over medium heat. Drain off any excess grease.
Stir the taco seasoning into the cooked ground beef and cook for one minute, following the seasoning packet directions. Remove the beef mixture from the heat.
In a separate large bowl, combine the softened cream cheese, sour cream, and the can of diced tomatoes and green chilies. Mix until smooth.
Stir in half of the shredded cheddar cheese and all of the Monterey Jack cheese into the cream cheese mixture.
Spread the refried beans evenly across the bottom of a 9×13 inch baking dish or a small slow cooker insert.
Spoon the cream cheese mixture evenly over the layer of refried beans.
Top the cream cheese layer with the seasoned ground beef mixture.
Sprinkle the remaining half of the cheddar cheese over the top layer.
Bake at 350 degrees Fahrenheit for 20 to 25 minutes, or until the dip is hot throughout and the cheese is melted and bubbly. If using a slow cooker, cook on low for 2 hours or high for 1 hour.
Serve your hot, gooey cheese dip immediately with tortilla chips.
Notes
For a make-ahead option, assemble the dip completely, cover it, and refrigerate for up to 24 hours. Add 10 to 15 minutes to the baking time if baking from cold.
If you prefer a less meaty version, omit the ground beef and use only the bean and cheese layers.
