  • 1/4 teaspoon black pepper
  • 2 1/4 cups vegetable broth or water
  • 1 tablespoon fresh lemon juice (optional)
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. Heat the olive oil and butter in a medium saucepan over medium heat.
  2. Add the chopped onion and cook until softened, about 4 minutes.
  3. Add the minced garlic and cook for 1 minute until fragrant. Do not let the garlic burn.
  4. Stir in the rinsed basmati rice, turmeric, salt, and pepper. Cook for 1 minute, stirring constantly to coat the grains.
  5. Pour in the vegetable broth or water. Bring the mixture to a boil.
  6. Once boiling, reduce the heat to the lowest setting, cover the saucepan tightly with a lid, and simmer for 15 minutes without lifting the lid.
  7. Remove the saucepan from the heat and let it stand, covered, for an additional 10 minutes. This step helps the rice steam and become fluffy.
  8. Fluff the rice gently with a fork. Stir in the lemon juice, if using.
  9. Garnish with fresh parsley before serving. This rice pairs well with grilled chicken or curry dishes.
