Instructions

  1. Cut the sweet potatoes into uniform 1/4-inch sticks. This consistency helps them cook evenly.
  2. Place the sweet potato sticks in a large bowl and cover them completely with cold water. Let them soak for at least 30 minutes. This step removes excess starch, which is key for crispiness.
  3. Drain the sweet potatoes completely. Lay them out on a clean kitchen towel or paper towels and pat them completely dry. Moisture prevents crisping.
  4. In the same dry bowl, toss the sweet potatoes with the cornstarch until lightly coated.
  5. In a separate small bowl, mix the olive oil, smoked paprika, garlic powder, salt, and pepper. Add this seasoning mixture to the sweet potatoes and toss until every fry is lightly coated.
  6. Preheat your air fryer to 380°F (195°C).
  7. Place the seasoned fries in the air fryer basket in a single layer. Do not overcrowd the basket; work in batches if necessary.
  8. Air fry for 15 to 20 minutes, shaking the basket vigorously every 5 to 7 minutes, until the fries are golden brown and crispy.
