  • 1 1/2 cups all-purpose flour (or gluten-free blend)
  • 1 teaspoon baking soda

  • 1/2 cup mix-ins (optional: vegan chocolate chips or chopped walnuts)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a standard 9×5 inch loaf pan, or line it with parchment paper.
  2. In a large bowl, mash the ripe bananas until mostly smooth.
  3. Add the plant milk, melted oil, brown sugar, and vanilla extract to the mashed bananas. Whisk until just combined. This is your one-bowl base.
  4. In a separate small bowl, whisk together the flour, baking soda, baking powder, salt, and cinnamon.
  5. Add the dry ingredients to the wet ingredients. Mix gently with a spatula until just combined. Do not overmix; a few streaks of flour are acceptable.

  7. Pour the batter into the prepared loaf pan and spread evenly.
