A refreshing watermelon feta salad perfect for summer gatherings, featuring mint and lime with an optional balsamic glaze.

Ingredients

  • 6 cups cubed seedless watermelon
  • 1 cup crumbled feta cheese
  • 1/4 cup fresh mint leaves, chopped
  • 2 tablespoons fresh lime juice
  • 1 tablespoon olive oil
  • Salt and freshly ground black pepper to taste
  • Optional: Balsamic glaze for drizzling

Instructions

  1. In a large bowl, combine the cubed watermelon, crumbled feta cheese, and chopped mint.
  2. In a small bowl, whisk together the lime juice and olive oil.
  3. Pour the lime-olive oil dressing over the watermelon mixture.
  4. Season with salt and pepper to your liking.
  5. Gently toss all ingredients to combine.
  6. If desired, drizzle with balsamic glaze before serving.
  7. Chill for at least 15 minutes before serving for best flavor.
