A spicy and cheesy grilled cheese sandwich inspired by jalapeño poppers, featuring a creamy jalapeño and cheese filling, crispy bread, and optional bacon.

Ingredients

  • 2 slices sourdough or Texas toast bread
  • 2 tablespoons butter, softened
  • 2 ounces cream cheese, softened
  • 1/4 cup shredded cheddar cheese
  • 1/4 cup shredded Monterey Jack cheese
  • 12 jalapeños, finely minced (fresh or pickled, adjust to your heat preference)
  • Optional: 2 slices cooked bacon, crumbled
  • Optional: Pinch of garlic powder

Instructions

  1. Spread butter on one side of each bread slice.
  2. In a small bowl, mix together the softened cream cheese, cheddar cheese, Monterey Jack cheese, minced jalapeños, and optional garlic powder and crumbled bacon.
  3. Spread the cheese mixture evenly onto the unbuttered side of one bread slice.
  4. Top with the other bread slice, buttered side up.
  5. Heat a skillet or griddle over medium-low heat.
  6. Place the sandwich in the skillet and cook for 3-5 minutes per side, or until the bread is golden brown and the cheese is melted and gooey. Adjust heat as needed to prevent burning.
  7. Slice and serve immediately.

  • For a less spicy sandwich, remove the seeds and membranes from the jalapeños before mincing.
